The project Mediterranean Intersections explores the deep connections between cuisine, art, and ecology in the Mediterranean. Participants will be involved in preparing three recipes using fermentation techniques: garum with seasonal fish, a small pie of fava beans and wild fennel in pickles, and citrus koso with vine leaves in brine.
The workshop concludes with a tasting that transforms these reflections into a sensory experience of storytelling and ecological regeneration.
Participants should bring: apron, cutting board, knife, spoon, salad bowl, and an airtight jar.
